My three year old has a busier social life than I do, so I find myself baking vegan muffins pretty much on a weekly basis, to keep Isaya and her friends fed & content. Isaya loves to help. It is such an easy recipe and not a lot of work. About 10 tot 15 minutes of prep and then 30 minutes in the oven. The whole house smells amazing, because of the cinnamon and they are a big hit with toddlers and their mamas. Because lucky for me, Isaya gravitates towards friends with the sweetest moms. So, all of a sudden I have all these cool and fun new mom friends. And I feed them vegan muffins. Here is my recipe.
What you need for six HUGE or 12 normal sized vegan muffins
- 300 grams of self raising flour (approximately 10,6 oz or 0,7 pounds)
- 200 grams of cane sugar (I never said this was a healthy vegan recipe 🙂 )
- 200 grams of vegan butter: we like Provamel because of the taste, but use whatever you like!
- 3 tablespoons of vanilla sugar
- 3 tablespoons of cinnamon
- 100 ml of almond milk (or another plant based milk, for instance oat milk, flax seed milk, rice milk or soy milk)
- 100 grams of vegan chocolate (we tend to use a cup of vegan “hagelslag”)
How to make vegan muffins
1. Pre-heat the oven (200 degrees) and measure all your ingredients. Keep in mind I am someone that cooks and bakes based on “what feels right”, so if you feel your dough needs a bit more flour, milk or butter, feel free to add some.
2. Put the flour, butter, sugar, vanilla sugar and cinnamon in a big bowl and give it a little stir with a spoon.
3. Then add your plant based milk, butter and chocolate.
4. You can use a kitchen mixer, but it’s not necessary. We prefer to go old school: mush the butter into smaller pieces with a wooden spoon and then go in with your hands. Just cause it’s way more fun when you are baking with a 3 y/o.
5. Grease the muffin/cupcake holder with vegan butter and put the dough in.

6. Put your muffins in the oven for about 30 minutes (be sure to check every now and then and before you take them out).
7. Let them cool off for 10-15 minutes and then they are ready to give a couple of 3 year olds and their mamas an amazing sugar rush.
